It usually happens in my opinion when you combine multiple elements of different genres and interpret it in your own way. When you breach the boundaries of a "genre".

Always go back to why you started. Listen to that song that got you into it. Open up old projects that make you cringe and listen to how far you have come. Yes reality seems to throw itself at you but you need to remember how much you love it. People wont understand that, you love for the music. Its conpletely different from when people say they love music. You spend time not just listening but creating it too. How i got over it was to take risks. I was studying engineering in college but i really knew i wanted to make music. I begged my parents so much to allow me to studying music production instead. They thought it was to risky and that it was too specialized. Eventually they let me and now im happier than before, more inspired. Its no longer just a hobby it turned into my life.

I usually have one or two main layers that occupy most of the spectrum then have very thin layers added but are really wide so that it can fill the spectrum

It really depends! sometimes i think i want to make a certain style like for example big room then i end up making trance in the end hahaha. But i usually start with a bassline then make sure it sits well with the kick then i add whatever i want to add to my drop, for me its the kick and bass thats essential first

lucky enough they taught extensive music theory in my degree. could share some more of the intricate stuff regarding theory such as modes specific tensions chords etc.

It really depends on you! sometimes you can make a song with just 20 layers sometimes up to 100! it really depends on how it sounds and if it sounds complete for you
